The culinary team at JOALI BEING is led by the talents of two trailblazing female chefs. Executive Chef Taylor-Jayne Shearman, who grew up on a farm in Australia, channels her passion for fresh, seasonal ingredients into menus that shine with wholesome flavours. Anchored in sustainability, her culinary approach reflects a respect for nature’s bounty as well as local farmers, fishermen and food artisans.

 

Executive Sous Chef Alexandra Martin, hailing from multi-cultural Sydney, celebrates diversity through her inspired creations, centred around a core of nutrition, balance and mindfulness. Her bold creativity brings a wide variety of ingredients to the island, with a special place reserved for standout local produce. With distinct culinary backgrounds, these two women thrive together, innovating through their shared earth-to-table philosophy.

Born in Japan and trained in France and Italy, Chef Yamamoto has honed his craft over an illustrious four-decade career. He has also graced the kitchens of the legendary Roger Verge in Provence, Chez Nous Hama in San Francisco, and his own celebrated namesake restaurant – Hide Yamamoto in Marina Bay Sands, Singapore.

Su serves ocean-to-table pescatarian cuisine, Plantae offers nourishing vegetarian and vegan fare, and B’Well features the JOALI BEING signature menu with meat and poultry options. As one of the best restaurants in the Maldives, FLOW won the Restaurant and Bar Design Award 2022.

 

MOJO. Welcome to our tropical beach sanctuary, located on a three-layered sundeck and offering an ideal spot for lunch and dinner by the pool. Our inspiring cocktail list features a variety of alcohol-free and biodynamic spirits at MOJO Bar. MOJO is also home to the SAI tea lounge.
